The Dubliner 10yo has been introduced in mid-2016 as expansion to the core range of the distillery. The casks used for this product previously contained Kentucky bourbon.
Intense and quite fragrant, ripe peach, apricot and yellow apple, buttery biscuit with vanilla and some toffee. Fruit salad with its juice. Honey. A very nice bourbon cask, with a delightful mix of fruit, honey, sweetness.
The same fruit of the nose is mixed with some light, semi-sweet spices (cinnamon, macis, nutmeg) and a minor herbal note, which becomes slightly bitter at times, without hurting the balance. A minor amount of salt.
Medium, still balanced and flavorful, with the juice of the previously described fruit salad, some balsamic hints, a pinch of salt, some citrus oil.
The Dubliner 10yo is a very well crafted product. The spirit is in line with its age and the bourbon cask was able to deliver a nice and juicy fruity profile, rich in nuances, while the spirit itself shows a nice honey body and some good alcohol integration. Sweet spices, balsamic distant hints and a touch of herbs make it to a rather complex profile, for a captivating fruition.
