The Edradour 10 Years Old 2005 – Signatory is a single cask whisky, was aged from 2005 to 2015 in ex-Sherry barrels. The bottling belongs to the Un-chill filtered line of Signatory, an independent bottler. Specifically, this bottle comes from the cask number 50. Edradour is a small distillery located near Pitlochry, Perthshire. It is Scotland’s smallest active distillery. It was founded way back in 1825.
Poured into the glass, it releases notes of sherry and chestnut honey. Wood is also perceptible, together with an important note of ripe fruit, where notes of dates and apple are outlined. After a few moments, a crème brulée aroma is added as well.
Rich and round, with notes of sherry and red fruit, enriched with honey, vanilla and spices. Sweet.
Medium-long finish. Spices and red fruit are perceptible.
Overall, the Edradour 10 Years Old 2005 – Signatory releases a flavor profile of good intensity. It is balanced, but the profile is not particularly complex, even though it is fairly structured. Having said that, despite the not particularly high ABV, the finish is prolonged and this Scotch is satisfying and easy to appreciate.
